FT food critic Nicholas Lander cited Passage 53 as one of the best kitchens in Paris, where dishes come with extra flavour. "Passage des Panoramas certainly has a particular microclimate, with its arcade shops selling stamps and ancient postcards. No 53 belongs to the sartorially elegant Guillaume Guedj, who runs the 10 tables on the ground floor, and Japanese chef Shinichi Sato who is in charge of the kitchens above. Passage 53 is very short of space: the spiral staircase is so narrow that I can only assume all the waiting staff previously trained as acrobats.
