In the attached August 2009 culinary review of Singapore, Shoba Narayan writes for the FT, "But the restaurant I am most excited about is Les Amis’ latest venture, 53. Chef Michael Han interned at The Fat Duck and L’Enclume in the UK. Located in a pre-war building on Armenian Street, 53 has dishes that sing: Han’s poached chicken breast glazed with apple-parsnip foam, served on a pinenut and peanut puree as a nod to local satays, is reason enough to get on a flight to Singapore, wherever you happen to live." In the attached August 2010 article, Norman Van Aken, acclaimed Miami chef (Normans) and a founder of American fusion cuisine, picks his favourite restaurants in Miami. For a business lunch, he recommends Tap, Tap in Miami Beach, a "formal" Haitian restaurant, [quiet for business conversations and a good] place to experience a bit of the ethnic mix that makes Miami the place that it is. Haitian is historically a poor cuisine with a lot of African influences, so there’s a lot of rice, curries, citrus and tropical fruits, goat, chicken, seafood and a flatbread called roti. It’s very vibrant and spicy." Van Aken's "best foodie secret" for Miami is a takeout place called Pinolandia which does tamales and a wide range of Nicaraguan food. Read more in the attached review.
